Chicken Dopiaza with tender chicken and browned onion petals in a thick curry house gravy

Chicken Dopiaza (Curry House Onion Curry)

Chicken Dopiaza is a medium spiced curry built around onions cooked in two distinct ways. Thinly sliced onions are browned and softened into the gravy, while broad onion petals are seared separately and returned near the end for sweetness, charred edges and texture.

This British curry house version uses Curry House Base Sauce and Curry House Pre-Cooked Chicken, but the additional onions ensure it does not taste or feel the same as a standard base sauce curry. The gravy should be thick, savoury and onion forward, with tender chicken and visible onion petals in every serving.

The recipe is also written as Chicken Do Pyaza or Chicken Dopiyaza. The spelling varies, but the defining idea remains the use of onions in more than one stage or form.

What Is Chicken Dopiaza?

Dopiaza is commonly interpreted as meaning two onions, double onions or onions used twice. That does not require exactly twice the quantity found in another curry. It refers more usefully to the importance of onion and the way it is added at separate stages.

In this version, sliced onion is cooked until deeply golden before the curry spices and base sauce are introduced. It softens further as the gravy reduces, adding sweetness, colour and body.

The second onion addition consists of broad petals seared over high heat. They keep their shape and provide a firmer texture against the softened onion in the sauce. Without this contrast, the finished dish loses much of its Dopiaza character.

Why Are the Onions Cooked in Two Ways?

Each onion preparation has a different job. Thin slices expose more surface area to the pan, helping them brown evenly and soften into the gravy. Their sweetness balances the chilli and warming spices.

The larger petals need less cooking. Searing them creates dark edges while leaving their centres slightly firm. They are added back during the final minutes so they soften without disappearing into the sauce.

Adding every onion at the beginning would produce one uniform texture. Adding them all near the end would leave the curry sharp and underdeveloped. The two-stage method provides both depth and a recognisable onion bite.

How Should You Cut the Onions?

Use brown or yellow onions. Cut half into thin half-moons about 2 to 3mm wide. Even slices cook at a similar rate and are less likely to leave some pieces pale while others burn.

Cut the remaining onions into quarters through the root, trim the root ends and separate the layers into broad petals. Aim for pieces approximately 3 to 4cm across at their widest point.

Keep the sliced onions and petals in separate bowls. This prevents either portion entering the wrong stage once the cooking begins.

How Deeply Should the Sliced Onions Be Browned?

Cook the slices until soft and richly golden rather than merely translucent. This usually takes 10 to 12 minutes over medium heat in a wide pan.

Stir regularly, but allow the onions enough contact with the pan to colour. A small measured splash of water loosens browned onion from the base and helps the slices soften without requiring additional oil.

Stop before the onions become dark brown or black. Scorched onion creates bitterness that cannot be hidden by the base sauce or spices.

Prepared Ingredients for Chicken Dopiaza

Have the Curry House Base Sauce, Curry House Pre-Cooked Chicken, Garlic and Ginger Paste, Mixed Powder and Garam Masala ready before heating the pan.

Warm the base sauce in a separate saucepan. Adding it hot keeps the curry bubbling and allows each addition to reduce quickly.

Plain pre-cooked chicken gives a softer result and leaves the onion flavour prominent. Curry House Chicken Tikka can be used for a version with charred, more strongly seasoned chicken.

How to Make Chicken Dopiaza

Use a wide frying pan or curry pan with a capacity of at least 3 litres. Prepare the two onion cuts first and keep them separate. Sear the petals, brown the slices, cook the spices and then add the hot base sauce in stages before heating the chicken and returning the petals. Cooking Instructions

Step 1: Prepare the onions and base sauce. Cut half the onions into thin half-moons and separate the remaining onions into broad petals. Keep the two cuts apart. Bring the Curry House Base Sauce to a gentle simmer in a separate saucepan.

Step 2: Sear the onion petals. Heat the first portion of oil or ghee in a wide pan over high heat. Add the petals in a loose layer and leave them against the hot surface briefly before turning. Remove them when their edges are charred but their centres remain slightly firm.

Step 3: Brown the sliced onions. Reduce the heat to medium and add the remaining oil or ghee. Add the sliced onions and cook until soft and richly golden, stirring regularly. Pour in the first measured water addition and scrape the base of the pan to loosen the browned onion.

Step 4: Temper the whole spices and aromatics. Add the bruised cardamom pods, cumin seeds and crushed coriander seeds. Stir until aromatic without allowing the seeds to darken excessively. Add the Garlic and Ginger Paste and cook until its raw aroma softens.

Step 5: Cook the ground spices and tomato. Add the Mixed Powder, ground cumin and Kashmiri chilli powder, followed immediately by the tomato purée and the second measured water addition. Stir until the tomato darkens slightly and the oil begins to show at the edges.

Step 6: Reduce the first base sauce addition. Pour in half the hot Curry House Base Sauce and increase the heat. Let it bubble steadily until reduced, scraping any concentrated sauce from the sides of the pan back into the curry.

Step 7: Add the chicken and remaining sauce. Add the remaining base sauce, Curry House Pre-Cooked Chicken and salt. Simmer until every piece of chicken is steaming hot and the gravy coats it well. Add the reserved hot water only if the sauce becomes too thick before the chicken is heated.

Step 8: Return the onion petals and finish the curry. Crush the kasoori methi between your palms and stir it into the curry with the Garam Masala and most of the coriander. Fold in the seared onion petals and simmer briefly so they heat through while retaining their shape.

Step 9: Rest and garnish. Remove the pan from the heat, taste and adjust the salt only if needed. Rest the curry briefly, scatter over the remaining coriander and remove the cardamom pods as they are found when serving.

What Consistency Should Chicken Dopiaza Have?

The gravy should coat the chicken and onion petals without forming a watery pool. It is thicker than a standard curry sauce but should not be reduced until dry.

Draw a spoon through the centre of the pan. The trail should remain visible for a moment before the sauce closes over it. The gravy will tighten slightly during the short rest.

If it is thin, simmer uncovered before returning the onion petals. If it becomes too thick, add hot water or base sauce one tablespoon at a time.

Can You Use Raw Chicken?

Pre-cooked chicken creates the quick curry house method, but raw boneless chicken thighs can be used. Cut 650g into bite sized pieces and add them after the first base sauce addition.

Pour in the remaining base sauce and simmer gently until the chicken is completely cooked before returning the onion petals. Add a little hot water if the gravy reduces before the centre of the chicken is done.

Chicken breast also works but cooks more quickly and can become dry. Keep the pieces evenly sized and avoid prolonged simmering once they are cooked.

How Spicy Is Chicken Dopiaza?

Chicken Dopiaza is generally a medium curry. The sweetness from the browned onions softens the chilli while the whole spices provide warmth and aroma.

For a mild version, reduce or omit the Kashmiri chilli powder while keeping the Mixed Powder. For more heat, add a sliced green finger chilli with the Garlic and Ginger Paste.

Do not increase every spice to make the curry hotter. Too much ground seasoning can obscure the onions and create a dusty finish.

Why Are My Onion Petals Soft?

The petals may have been cut too small, crowded in the pan or cooked for too long during their first sear. Use a wide pan and allow the pieces to contact the surface without constant stirring.

Remove them while the centres still feel slightly underdone. They cook again after being returned to the sauce.

If making the curry in advance, store the seared petals separately and fold them through while reheating. This preserves more of their texture.

Cooking Tips

  • Weigh or divide the two onion portions before cutting so the stages remain clear.
  • Use a wide pan to brown the slices and sear the petals effectively.
  • Brown the sliced onions patiently because they provide much of the curry’s sweetness.
  • Keep the base sauce hot before it enters the main pan.
  • Add the ground spices and tomato promptly so the spices do not scorch.
  • Heat the pre-cooked chicken only until steaming hot throughout.
  • Return the onion petals near the end so they remain visible.
  • Crush the kasoori methi between your palms to release its aroma.

Variations and Substitutions

Curry House Chicken Tikka can replace the plain pre-cooked chicken in the same quantity. Add it during Step 7 and avoid overcooking the already grilled pieces.

For Lamb Dopiaza, use Curry House Pre-Cooked Lamb. A small amount of its strained cooking stock can replace part of the water if the sauce needs loosening.

Curry House Fried Paneer works for a vegetarian version. Add it after the gravy has reduced and fold gently so the cubes stay intact.

Green pepper can be seared with the onion petals. Its fresh, slightly bitter character balances the onion sweetness, although the dish remains a Dopiaza without it.

What to Serve with Chicken Dopiaza

Serve Chicken Dopiaza with plain basmati rice, Pilau Rice, naan or chapati. The thick onion gravy works particularly well with breads.

Cucumber Raita or a fresh onion and cucumber salad adds a cooling contrast. For a larger curry house meal, pair it with Tarka Dhal, Bombay Potatoes or a dry vegetable bhaji.

How to Store and Reheat Chicken Dopiaza

Cool leftovers promptly and refrigerate them in a covered container within two hours. Eat within 48 hours or freeze the curry in labelled portions.

Defrost frozen Chicken Dopiaza in the fridge. Reheat only the portion required until steaming hot throughout, stirring regularly so the chicken heats evenly.

The sauce thickens during storage. Add a small splash of water or base sauce when reheating if needed. For better onion texture, sear fresh petals and fold them into the reheated curry shortly before serving.
