Mushroom Fried Rice

Mushroom fried rice is one of those curry house side dishes that can easily become the first thing emptied from the table. The rice is light and separate, while the mushrooms bring a deeper savoury flavour that works particularly well with rich British Indian Restaurant style curries.

This version uses cold cooked basmati rice, cumin seeds, mushrooms, onion, red pepper and peas. It is gently coloured with turmeric rather than heavily spiced, so it complements a curry instead of competing with it. Once the rice is cooked and chilled, the final dish takes very little time to prepare.

What Is Curry House Mushroom Fried Rice?

Curry house mushroom fried rice is cooked basmati rice stir fried with mushrooms, vegetables and a small amount of spice. It is different from Chinese style mushroom fried rice, which is more likely to contain soy sauce, sesame oil and egg.

The word “special” is used quite loosely on British curry house menus. Depending on the restaurant, it may mean extra vegetables, egg or small pieces of cooked meat. In this vegetarian version, the mushrooms, red pepper and peas make the rice more substantial while keeping it suitable as a side dish.

Why Does the Rice Need to Be Cold?

Cold rice is firmer and drier than freshly cooked rice. This allows the grains to move around the pan without collapsing into a soft mass. Warm rice still carries plenty of surface moisture, so it is more likely to stick to the pan and clump when stirred.

Cook the basmati in advance, cool it quickly and refrigerate it as soon as possible. Loosen any compacted grains gently with your fingers before frying. If the rice feels wet, spread it across a plate or tray for a few minutes while you prepare the vegetables.

Which Mushrooms Work Best?

Chestnut mushrooms are my first choice because they keep a good texture and have more flavour than standard white mushrooms. Closed cup white mushrooms also work well and give the rice a lighter appearance.

Slice the mushrooms fairly thinly so they cook quickly. Avoid washing them in a bowl of water because they absorb moisture. Brush away any dirt or wipe the caps with damp kitchen paper, then trim the stalk ends before slicing.

What Gives the Rice Its Curry House Flavour?

Cumin seeds fried in hot ghee provide the main aromatic note. Turmeric adds a warm yellow colour and a mild earthy flavour, but too much can taste dry or bitter. This rice should look lightly golden rather than intensely yellow.

Ghee gives the rice a rounded buttery flavour and helps separate the grains. Neutral vegetable oil is a good alternative if you want a dairy free version. The spring onions added at the end bring freshness without making the rice taste raw or sharply oniony.

How to Make Curry House Mushroom Fried Rice

Have the cooked rice chilled and the vegetables prepared before heating the pan. Fry the cumin seeds first, brown the mushrooms without crowding them, then add the remaining vegetables and turmeric. Fold in the cold rice and continue cooking until every part is steaming hot. See the recipe card at the bottom for exact quantities and printable directions

Ingredients You Will Need

  • Cooked and chilled white basmati rice
  • Ghee or neutral vegetable oil
  • Cumin seeds
  • Chestnut mushrooms
  • Onion
  • Red pepper
  • Frozen peas
  • Ground turmeric
  • Ground black pepper
  • Fine salt
  • Spring onions
  • Fresh coriander, optional

Cooking Instructions

Remove the chilled rice from the fridge shortly before cooking. Use clean fingers or a fork to separate any compressed grains, taking care not to crush them.

Heat a wide frying pan or wok over a medium to high heat. Add the ghee and allow it to become hot, then add the cumin seeds. Let them sizzle briefly until fragrant, but do not allow them to darken heavily.

Add the mushrooms and spread them over the hot surface. Leave them undisturbed at first so they begin to colour, then stir fry until their released moisture has evaporated and the edges are lightly browned.

Add the onion and red pepper. Stir fry until the onion has softened slightly while the pepper still retains some texture. Add the peas and cook until they have lost their icy appearance.

Sprinkle in the turmeric and black pepper. Stir them through the vegetables briefly so the spices meet the hot fat without remaining in one concentrated patch.

Add the cold rice and fold it through the mushroom mixture with a spatula. Keep lifting rice from the base and turning it over rather than stirring forcefully. Continue until the grains are evenly coloured and steaming hot throughout.

Taste before adding salt because the rice may already have been seasoned when it was first cooked. Fold through most of the spring onions and optional coriander, then scatter the remainder over the top before serving immediately.

How to Keep Fried Rice Light and Separate

Use a wide pan so steam can escape instead of collecting around the rice. A crowded pan makes the mushrooms release water faster than it can evaporate, which leaves the vegetables pale and the rice damp. If your pan is small, cook the mushrooms first, remove them and return them when you add the rice.

Do not continuously stir. Give the ingredients enough contact with the hot pan to fry, then turn them with a broad spatula. This is gentler on basmati than a wooden spoon and makes it easier to lift the rice from the base.

The rice should be properly chilled, but it does not need to be dry or hard. If it has dried excessively in the fridge, sprinkle a very small amount of water around the edge of the pan and cover briefly. The trapped steam will soften the grains without soaking them.

Can I Make This with Freshly Cooked Rice?

Chilled rice gives the most reliable result, but you can cool a freshly cooked batch quickly when necessary. Spread it in a thin layer across a clean tray rather than leaving it in the saucepan. Once the steam has subsided, refrigerate it promptly until thoroughly cold.

Do not place a deep container of very hot rice in the fridge because the centre will cool slowly. Dividing it between shallow containers or spreading it across a tray helps it lose heat more evenly.

Variations and Substitutions

You can replace chestnut mushrooms with closed cup white mushrooms. Larger flat mushrooms have a stronger flavour but release more liquid, so cook them until the pan is dry before adding the onion.

For a dairy free and vegan mushroom fried rice, replace the ghee with rapeseed or sunflower oil. Butter can be used in place of ghee, although its milk solids brown more quickly, so keep a closer eye on the heat.

Frozen sweetcorn can replace the peas, or you can use a mixture of both. Keep the total quantity modest so the rice remains the main part of the dish. Finely diced green pepper can replace red pepper, but its flavour is sharper and less sweet.

For extra heat, add a finely sliced green chilli with the onion. If you want a more substantial meal, fold through cooked chicken tikka or fried paneer. Make sure any added protein is already safely cooked and becomes steaming hot throughout.

Cooking Tips

  • Measure the cooked rice by weight because cup measurements vary according to how tightly the grains are packed.
  • Prepare every ingredient before heating the pan. The frying stage moves quickly once the cumin seeds enter the hot ghee.
  • Brown the mushrooms before adding the onion. Adding everything together encourages the vegetables to steam.
  • Use turmeric carefully. More turmeric creates a stronger colour, but it also adds bitterness and can make the rice taste dusty.
  • Taste before seasoning. Salt already present in the cooked rice may be enough.
  • Use a broad spatula and a lifting motion to protect the long basmati grains.

Why Is My Mushroom Fried Rice Soggy?

Warm rice, wet mushrooms or an overcrowded pan are the usual causes. Start with properly chilled rice and cook the mushrooms until the liquid they release has evaporated. Maintain medium to high heat and use a pan wide enough for steam to escape.

If the rice is already in the pan and feels damp, spread it into an even layer and leave it untouched briefly. Turn it gently and repeat. Avoid adding more fat because this makes soggy rice greasy rather than dry.

What to Serve with Mushroom Fried Rice

The mild seasoning makes this rice suitable for many curry house dishes. It works particularly well with chicken tikka masala, chicken jalfrezi, lamb bhuna, rogan josh and saag paneer. The mushrooms are also a good match for tarka dhal or a vegetable curry.

Add naan or chapati if you are serving several dishes, along with cucumber raita, mint sauce or red onion chutney. Because the rice already contains vegetables and ghee, it needs very little garnish beyond spring onion or coriander.

How to Store and Reheat Mushroom Fried Rice Safely

The safest approach is to prepare only as much mushroom fried rice as you plan to serve. This recipe begins with cooked rice and heats it for a second time, so it should be eaten immediately rather than cooled and reheated again.

When preparing the rice in advance, cool it quickly, ideally within one hour. Keep it refrigerated and use it within 24 hours. Once stir fried, make sure the rice is steaming hot throughout before serving.

You can freeze the plain cooked rice before making this recipe. Cool it quickly, divide it into portions and freeze promptly. Defrost it in the fridge, then use it in the recipe and heat it only once until steaming hot.

Notes

The 600g cooked rice required is approximately the yield from 300g uncooked white basmati rice, although the exact cooked weight varies.
Cook and cool the rice safely before beginning. Refrigerate it promptly and use within 24 hours.
Do not reheat the finished mushroom fried rice again because the chilled cooked rice has already been reheated during stir frying.
If the pan is crowded, brown the mushrooms in two batches so they fry rather than steam.
The recipe is vegetarian when made with ghee and vegan when made with vegetable oil.
